Bhopal : East or West and North or South “Tawa” is an integral part of every Indian kitchen. The familiar “Tak Tak” of this versatile utensil will be heard for next 15 days at the multi cuisine restaurant MoMo Café at Courtyard by Marriott. The chefs will be serving famous tawa dishes from across India straight from tawas. The occasion will be yet another unique food festival from Courtyard by Marriott – “The Tawas Of India”. Starting from 11th August between 7.30 to 11.30 pm this first of its kind food fest will offer innumerable variety of veg and non veg tawa dishes to the platter of ever demanding food lovers of Bhopal.
Executive Chef, Courtyard by Marriott, Bhopal Ravinder Singh Panwar while addressing a press conference to announce The Tawas Of India food festival said “The Tawa technique of cooking has been an integral part of age old Indian cuisine down the centuries. The chef’s secret recipes use a blend of traditional spices like cumin, cinnamon, star anise, cardamom, red chillies, coriander and turmeric – now come to be popularly known as Tawa Spices.”
Talking about menu to be served Chef Ravinder said “From Kebabs to Paranthas, Khurchans, Tikkis, Pav Bhaji, Chhole Kulche To typical Omlet….this festival will be packed with exciting and innovative dishes from nook and corners of India. With the sizzle of the food on the tawa and the deep aromas, one can enjoy foods like Tawa Palak Pudina Paratha, Amritsari Tawa Gosht, Tawe Ki Urad Dal and Kalimirch Tawa Chicken”.
He further said that Chefs will be cooking tawa food from Punjab, Delhi, Kolkata, Jaipur and Lucknow and will be showcasing the traditional and authentic food from these places under one roof at MoMo café during dinner. Some of the non-vegetarian items on the menu include Tawa Jhinga (fresh prawns, marinated in tandoori spices, ajwain, grilled golden in tandoor and then tossed on the tawa with delectable spices), Tawa Gosht (diced tender lamb tossed on the tawa and smothered in our chefs secret spices), Gosht Seekh Kabab Tawa (minced lamb, blended with fresh tandoori spices roasted in tandoor and sauteed to perfection on the Tawa), Tandoor Tawa Murg, Murg Tikka Tawa etc.
Vegetarians can opt for Paneer Dhaniya Adraki, Makai Kumbh Chatpata (corn and mushroom tossed in chatpata spices and sauteed Tawa style), Bhuna Sabz Miloni, Tawa Aloo Bhindi etc.
All these Tawa items can be served in the different styles mainly mildly spiced masala, spiced curry, jalfrezi, bhuna etc. Patrons also have the options of choosing various Biryanis such as Prawn, Chicken Tikka, Bhuna Gosht, Navratan Kashmiri, Paneer Akabari Biryani.
